Veggie Breakfast Scramble


Pick your favorite vegetables and throw them in a pan with a spritz of EVOO, I lightly season them with garlic salt and pepper. I chose asparagus, Spinach, Onions, and Sweet peppers.  The spinach will cook down a lot so make sure you use a generous portion.  Sautee them on Medium-Low heat until they just about done (about 3-4 minutes).
When the veggies are getting tender add the eggs (2).  You can crack them right into the pan to save on time and mess.  Scramble the eggs and veggies together until the eggs are done (another 3-4 minutes), and season them to taste.
After the eggs and veggies were done I toasted a whole wheat pita and shoved the scrambled goodness inside.  I sprinkled a little shredded cheese on top and that was a huge win!  If you are worried you might not like eggs and vegetables, try it with the pita and a little shredded cheese.  I dont know why, but the shredded cheese disguises the taste way more than melted cheese.... I swear.  Try it.

Before and After

The last 3 years of my life have taken me on an incredible journey. In these years I have made new friends, set and reached new goals, and grown more than I thought possible. I want to thank all my friends and family for supporting me through the tough times and being here to enjoy all the good times to come.
One of the big choices I made was to take control of my life and my health. Those of you who know me, know I have always been confident and outgoing; however, there was something clearly missing. I was happy, but I could be happier, and I guess on some level I always knew that.
Today I make working out a priority. I drink my protein shakes (shakeology is my favorite), I eat my veggies, I take my vitamins, and I try my best to maintain the healthy lifestyle I have worked so hard for. If you're wondering if losing weight and feeling better will make THAT much of a difference in your life, it will... And I am speaking from experience. I have ridden the weight roller coaster my whole life and have finally realized the importance, not of losing weight, but of gaining all the time, activities, and friendships a healthy lifestyle has to offer.
It's weird and scary to write a post like this and share it with all your friends, but I started this blog to motivate all of us and hopefully this will get the ball rolling. My Story!

Hi Everyone! My name is Stacie and I'm from Huntington Beach, CA. I'm a full-time nursing student and I also work part-time to stay busy! 
Just a few years ago I weighed over 300 lbs. There was a moment of clarity, a breaking point, when I decided that I could no longer live in the body I had. I was exhausted most of the time, I was embarrassed in public at a local amusement park when I couldn't fit the harness down on the ride, people treated me differently... It was time to make a change. I took responsibility for my health and my happiness and I started the amazing journey to redefine my health and my way of life.
3 years later I'm still struggling to meet my final goal, but my life has changed in ways I could not even begin to describe. I was always happy and confident with who I was on the inside, but changing the way I felt about the outside allowed me to shine even brighter! I had no idea that I was missing out on life until I started doing all the things I wasn't able to do before. I started hiking, rock climbing, snowboarding, water skiing, even sky diving! Losing weight and getting healthy was the best thing that ever happened to me, and I want to share that experience with other people!
I understand how hard it is to get started when you feel like there is no way to lose the weight. At over 300lbs,  I thought it was impossible for me to get started or see any real difference.  I know what it feels like to want to quit because you don't see the results you want, or it's not happening quick enough. I've gone through the struggles and I have come out a better and stronger person for it. In the end, all of the hard work and perseverance pays off in the most amazing ways!  I can't even describe the level of happiness I feel now; I know that I accomplished something incredible for myself, and my quality of life has improved 10 fold! If I can do it, anyone can!
